Description

This Cottage Cheese Fettuccine Alfredo is a creamy, protein-packed twist on the classic Alfredo. Smooth, rich, and satisfying while still feeling lighter than traditional versions.


Ingredients

  • 10 oz fettuccine pasta
  • 1 cup cottage cheese
  • 1 tbsp butter
  • 3 garlic cloves, minced
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp ground black pepper
  • 1/2 cup milk
  • Salt, to taste
  • Extra parmesan, for garnish
  • Fresh parsley, for garnish


Instructions

  1. Cook fettuccine in salted boiling water until al dente. Drain and set aside.
  2. Lightly warm cottage cheese, butter, and garlic (microwave or pan) until softened.
  3. Blend cottage cheese, butter, garlic, parmesan, milk, and black pepper until completely smooth.
  4. Taste and adjust salt as needed.
  5. Let pasta cool slightly after draining.
  6. Pour sauce over pasta and mix until fully coated.
  7. Serve warm and garnish with parmesan and parsley.
