Description

This halal Tex Mex casserole is a hearty, cheesy, high-protein bake made with seasoned ground beef, beans, rice, and melted cheddar for a comforting family-style meal.


Ingredients

  • 1 lb halal lean ground beef
  • 1/2 cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp tomato paste
  • 3/4 cup chopped tomatoes
  • 1/2 cup salsa (halal-certified)
  • 1 can black beans (drained and rinsed)
  • 1 cup cooked basmati rice
  • 2 cups shredded cheddar cheese (halal-certified)
  • 1/4 cup green bell pepper (diced)
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 175°C (350°F) and prepare a baking dish.
  2. Brown ground beef in a skillet, breaking it apart as it cooks.
  3. Drain excess fat and set beef aside.
  4. Sauté onion until translucent, then add garlic.
  5. Return beef to skillet and mix in tomato paste, tomatoes, and salsa.
  6. Stir in black beans and cooked rice until well combined.
  7. Transfer mixture to baking dish and top with cheddar cheese and green pepper.
  8. Bake for 25 minutes, then broil 2–3 minutes until cheese is golden.
  9. Serve hot in slices.

Notes

  • Ensure salsa and beef are halal-certified.
  • Can swap rice for cauliflower rice for lower carbs.
  • Best served fresh but stores well refrigerated.
