This Healthy Sweet Potato Shepherd’s Pie is a comforting fall dinner made with lean ground turkey, peas, savory seasonings, and a flavorful layer of creamy mashed sweet potatoes. It’s an easy, hearty, and family-friendly meal that works beautifully for weeknight dinners and meal prep.
Ingredients
- 1.5 pounds sweet potatoes, peeled and chopped
- ½ teaspoon Italian seasoning blend
- Sea salt and pepper, to taste
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 1½ pounds lean ground turkey
- 2 tablespoons tomato paste
- 3-4 garlic cloves, minced
- ½ teaspoon dried oregano
- 1 tablespoon smoked paprika
- 1 cup chicken or beef broth
- 1 cup frozen peas, or other vegetables such as corn or carrots, defrosted
Instructions
- Preheat the oven to 375°F.
- Place the chopped sweet potatoes in a large saucepan and add just enough water to cover them. Bring to a boil and cook for about 10 minutes, or until the potatoes are tender.
- Drain the sweet potatoes and mash them. Season with sea salt, pepper, and Italian seasoning blend.
- Heat the olive oil in a large nonstick pan over medium-high heat. Sauté the diced onion for 3-4 minutes, then add the minced garlic and cook for about 1 minute.
- Add the lean ground turkey and cook, crumbling it with a wooden spoon, until the meat is cooked through.
- Stir in the tomato paste, dried oregano, smoked paprika, salt, pepper, and broth. Simmer for a few minutes until the liquid is reduced, then stir in the frozen peas.
- Spread the turkey mixture into a 2-quart baking dish. Spoon the mashed sweet potatoes over the top and spread evenly all the way to the edges.
- Bake for 25-30 minutes, or until the sweet potatoes are just beginning to brown.
- Let the shepherd’s pie rest briefly before serving.
Notes
- For 6 servings, the serving size is about 1¼ cups. For 4 servings, the serving size is about 2 cups.
- White potatoes can be used instead of sweet potatoes.
- Lean ground beef or ground chicken can be substituted for the ground turkey.
- Any type of broth can be used in the filling.
- Leftovers can be stored covered in the refrigerator for up to 5 days and reheated in the microwave.
- The shepherd’s pie can be frozen for up to 3 months.
