Ingredients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 1 teaspoon garlic, minced
- 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
- 5 cups chicken broth
- 14½ ounces diced tomatoes with garlic and onion
- 10 ounces cream of mushroom soup
- 3 tablespoons tomato paste
- ½ cup sun-dried tomatoes, chopped
- 1½ tablespoons Italian seasoning
- 1 bay leaf
- 8 ounces cream cheese, softened
- ½ cup parmesan cheese
- 1 teaspoon sugar (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large soup pot over medium-high heat.
- Sauté onion until tender, about 8 minutes. Add garlic and cook for 1 minute.
- Add chicken, broth, diced tomatoes, cream of mushroom soup, tomato paste, sun-dried tomatoes, Italian seasoning, bay leaf, and sugar if using.
- Stir well, bring to a simmer, reduce heat to low, cover, and cook for 20 minutes.
- Remove bay leaf.
- Whisk softened cream cheese with a few ladles of hot broth until smooth, then stir into soup.
- Warm through, season with salt and pepper, and top with parmesan cheese before serving.
