Description
This Summertime Tortellini Pasta Salad is a fresh, colorful, and creamy dish loaded with tender tortellini, crisp vegetables, and a tangy ranch dressing. Perfect for BBQs, picnics, or light summer meals.
Ingredients
- 8–9 oz tortellini (fresh or frozen)
- 1 medium zucchini, thinly sliced
- 1 large carrot, peeled and diced
- 1 pint grape tomatoes, halved
- 5 green onions, sliced
- 1/4 cup fresh parsley, chopped
- 3/4 cup creamy ranch dressing
- 2–3 tbsp shredded Parmesan cheese
Instructions
- Cook tortellini according to package directions, then drain and rinse under cold water.
- Transfer pasta to a large bowl.
- Add zucchini, carrot, tomatoes, green onions, and parsley.
- Pour in ranch dressing and Parmesan cheese.
- Toss gently until evenly combined.
- Chill for at least 2 hours before serving.
