Description

This Summertime Tortellini Pasta Salad is a fresh, colorful, and creamy dish loaded with tender tortellini, crisp vegetables, and a tangy ranch dressing. Perfect for BBQs, picnics, or light summer meals.


Ingredients

  • 8–9 oz tortellini (fresh or frozen)
  • 1 medium zucchini, thinly sliced
  • 1 large carrot, peeled and diced
  • 1 pint grape tomatoes, halved
  • 5 green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • 3/4 cup creamy ranch dressing
  • 2–3 tbsp shredded Parmesan cheese


Instructions

  1. Cook tortellini according to package directions, then drain and rinse under cold water.
  2. Transfer pasta to a large bowl.
  3. Add zucchini, carrot, tomatoes, green onions, and parsley.
  4. Pour in ranch dressing and Parmesan cheese.
  5. Toss gently until evenly combined.
  6. Chill for at least 2 hours before serving.
