Description
Spanakopita Spiral is a golden, flaky Mediterranean pastry filled with creamy spinach, feta, herbs, and cheese, wrapped in crisp layers of phyllo dough for a stunning savory spiral perfect for appetizers or side dishes.
Ingredients
- 1–1½ lbs spinach
- 1 medium onion, chopped
- 2 garlic cloves
- ½ tsp kosher salt
- ½ tsp black pepper
- 1 tbsp lemon juice
- ½ cup goat cheese or feta
- 1½ cups feta cheese
- ½ cup shredded cheddar cheese
- 1 egg
- 1 cup parsley
- ½ cup toasted pine nuts
- Pinch of nutmeg
- 16 sheets phyllo pastry
- ½ cup olive oil or melted butter
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion and garlic in olive oil until soft.
- Add spinach, salt, pepper, and lemon juice. Cook until all moisture evaporates.
- Transfer spinach to a bowl and let cool slightly.
- Mix in cheeses, egg, parsley, pine nuts, and nutmeg.
- Brush a baking dish with olive oil.
- Layer phyllo sheets, brushing each with oil, and add spinach filling.
- Roll into a log and coil into a spiral inside the dish.
- Repeat until all filling is used.
- Brush top generously with olive oil.
- Bake 25–30 minutes until golden and crisp.
- Cool slightly before slicing and serving.
Notes
- Keep phyllo covered to prevent drying.
- Remove excess water from spinach for crisp texture.
- Do not overfill the pastry layers.
- Brush each sheet well for flaky layers.
