This Southwest Chicken Salad is a fresh, hearty, and flavor-packed meal loaded with crisp veggies, juicy grilled chicken, and a creamy cilantro lime dressing. Perfect for a satisfying lunch or dinner.
Ingredients
- Cilantro Lime Dressing:
- 1 cup buttermilk
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 packet ranch seasoning
- 4 tbsp lime juice
- 7 tbsp fresh cilantro, chopped
- Salad:
- 4 chicken breasts
- 1 packet southwest taco seasoning
- 1/2 cup olive oil
- 1/4 cup water
- 24 oz romaine lettuce, chopped
- 1 cup black beans, drained
- 1 cup corn, drained
- 1 cup tomatoes, chopped
- 1 avocado, diced
- 1/2 cup red onion, sliced
- Tortilla strips (optional)
Instructions
- Whisk dressing ingredients together and refrigerate for 1 hour.
- Mix seasoning, oil, and water. Marinate chicken for 1 hour.
- Grill chicken over medium-high heat for 8–9 minutes per side until cooked.
- Slice chicken into strips.
- Divide lettuce into bowls and top with beans, corn, tomatoes, avocado, and onion.
- Add sliced chicken and drizzle with dressing.
- Garnish with tortilla strips and lime if desired.

- Dressing can be stored in fridge up to 1 week.
- Add lemon or lime juice to avocado to prevent browning.
