Description

This Southwest Chicken Salad is a fresh, hearty, and flavor-packed meal loaded with crisp veggies, juicy grilled chicken, and a creamy cilantro lime dressing. Perfect for a satisfying lunch or dinner.


Ingredients

  • Cilantro Lime Dressing:
  • 1 cup buttermilk
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 packet ranch seasoning
  • 4 tbsp lime juice
  • 7 tbsp fresh cilantro, chopped
  • Salad:
  • 4 chicken breasts
  • 1 packet southwest taco seasoning
  • 1/2 cup olive oil
  • 1/4 cup water
  • 24 oz romaine lettuce, chopped
  • 1 cup black beans, drained
  • 1 cup corn, drained
  • 1 cup tomatoes, chopped
  • 1 avocado, diced
  • 1/2 cup red onion, sliced
  • Tortilla strips (optional)


Instructions

  1. Whisk dressing ingredients together and refrigerate for 1 hour.
  2. Mix seasoning, oil, and water. Marinate chicken for 1 hour.
  3. Grill chicken over medium-high heat for 8–9 minutes per side until cooked.
  4. Slice chicken into strips.
  5. Divide lettuce into bowls and top with beans, corn, tomatoes, avocado, and onion.
  6. Add sliced chicken and drizzle with dressing.
  7. Garnish with tortilla strips and lime if desired.

  • Dressing can be stored in fridge up to 1 week.
  • Add lemon or lime juice to avocado to prevent browning.
