Description

This halal Southwest ground beef and sweet potato skillet is a quick, flavorful one-pan meal packed with spices, tender sweet potatoes, and melted cheese—perfect for busy weeknights.


Ingredients

  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1 lb halal ground beef
  • 5 tsp chili powder (divided)
  • 2 tsp ground cumin
  • Salt and black pepper to taste
  • 1 tsp grated garlic
  • 2 cups sweet potatoes (peeled and diced)
  • 1 can (14.5 oz) fire roasted diced tomatoes
  • 4 oz diced green chiles
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro (optional)


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Cook ground beef and onion, breaking it apart.
  2. Add 3 tsp chili powder, 1 tsp cumin, salt, and pepper. Cook until nearly done, then add garlic and cook 1 minute.
  3. Remove beef mixture and set aside.
  4. In the same skillet, add sweet potatoes, tomatoes, green chiles, water, remaining chili powder and cumin. Season with salt and pepper.
  5. Cover and simmer for about 20 minutes until sweet potatoes are tender.
  6. Return beef to skillet and mix well.
  7. Top with cheese, cover, and let melt. Garnish with cilantro and serve.

Notes

  • Use halal-certified beef.
  • Add black beans or bell peppers for extra flavor.
  • Swap beef with ground chicken or turkey if preferred.
