Description
This halal Southwest ground beef and sweet potato skillet is a quick, flavorful one-pan meal packed with spices, tender sweet potatoes, and melted cheese—perfect for busy weeknights.
Ingredients
- 1 tbsp olive oil
- 1/2 cup diced onion
- 1 lb halal ground beef
- 5 tsp chili powder (divided)
- 2 tsp ground cumin
- Salt and black pepper to taste
- 1 tsp grated garlic
- 2 cups sweet potatoes (peeled and diced)
- 1 can (14.5 oz) fire roasted diced tomatoes
- 4 oz diced green chiles
- 1/4 cup water
- 1/2 cup shredded cheddar cheese
- Fresh cilantro (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat. Cook ground beef and onion, breaking it apart.
- Add 3 tsp chili powder, 1 tsp cumin, salt, and pepper. Cook until nearly done, then add garlic and cook 1 minute.
- Remove beef mixture and set aside.
- In the same skillet, add sweet potatoes, tomatoes, green chiles, water, remaining chili powder and cumin. Season with salt and pepper.
- Cover and simmer for about 20 minutes until sweet potatoes are tender.
- Return beef to skillet and mix well.
- Top with cheese, cover, and let melt. Garnish with cilantro and serve.
Notes
- Use halal-certified beef.
- Add black beans or bell peppers for extra flavor.
- Swap beef with ground chicken or turkey if preferred.
