This Slow Cooker White Lasagna Soup is a delicious twist on traditional lasagna, featuring tender shredded chicken, Italian seasonings, sun-dried tomatoes, fresh spinach, lasagna noodles, Parmesan cheese, and a creamy broth for a comforting and flavorful meal.
Ingredients
- 1 white onion, diced
- 4 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 6 cups chicken stock
- 1 pound boneless, skinless chicken breasts
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 tablespoons cornstarch
- 4 cups fresh spinach
- 8 ounces lasagna noodles, broken and cooked separately
- Shredded Parmesan cheese, for serving
- Fresh parsley, for serving
Instructions
- In a slow cooker, combine the diced onion, minced garlic, Italian seasoning, salt, black pepper, and crushed red pepper flakes, if using.
- Pour in the chicken stock and stir everything together.
- Add the chicken breasts to the slow cooker.
- Sprinkle the chopped sun-dried tomatoes over the top.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
- Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
- In a separate bowl, whisk together the heavy cream and cornstarch until smooth. Pour the mixture into the slow cooker and stir well.
- Cover and continue cooking on high for an additional 30 minutes.
- Meanwhile, cook the lasagna noodles according to the package instructions. Drain and set aside.
- Stir the fresh spinach into the soup until wilted.
- Just before serving, add the cooked lasagna noodles to the slow cooker and stir gently to combine.
- Serve in bowls topped with shredded Parmesan cheese and fresh parsley.
Notes
- The noodles tend to absorb the broth as the soup sits. Add additional chicken broth or water to thin the soup as needed.
- Cook the lasagna noodles separately and add them just before serving to help prevent them from becoming too soft.
- Adjust the crushed red pepper flakes to your preferred level of heat.
