Ingredients
- 1 lb large shrimp (halal, peeled and deveined)
- 2 ripe avocados
- 1 fresh mango (diced)
- 1/2 red onion (chopped)
- 1 jalapeño (diced, optional)
- 2 tbsp chopped cilantro
- 2 tbsp lime juice
- 2 tbsp olive oil
- Chili powder to taste
- Salt and pepper to taste
- 2 cups cooked rice or quinoa
- Chili sauce (halal-certified)
Instructions
- Mix mango, red onion, jalapeño, cilantro, and lime juice to make salsa. Set aside.
- Heat olive oil in a skillet and cook shrimp with salt, pepper, and chili powder for 2–3 minutes per side.
- Lightly mash avocado with salt and lime juice.
- Assemble bowls with rice or quinoa as the base.
- Add mashed avocado, cooked shrimp, and mango salsa on top.
- Drizzle with lime chili sauce before serving.
