Ingredients

  • 1 lb large shrimp (halal, peeled and deveined)
  • 2 ripe avocados
  • 1 fresh mango (diced)
  • 1/2 red onion (chopped)
  • 1 jalapeño (diced, optional)
  • 2 tbsp chopped cilantro
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Chili powder to taste
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • Chili sauce (halal-certified)


Instructions

  1. Mix mango, red onion, jalapeño, cilantro, and lime juice to make salsa. Set aside.
  2. Heat olive oil in a skillet and cook shrimp with salt, pepper, and chili powder for 2–3 minutes per side.
  3. Lightly mash avocado with salt and lime juice.
  4. Assemble bowls with rice or quinoa as the base.
  5. Add mashed avocado, cooked shrimp, and mango salsa on top.
  6. Drizzle with lime chili sauce before serving.
