Description
This baked Salsa Chicken is a creamy, cheesy casserole layered with seasoned chicken, cream cheese, refried beans, salsa, and melted cheddar and Monterey Jack. A rich, comforting, and easy dinner perfect for serving with rice.
Ingredients
- 2 large boneless skinless chicken breasts
- 1 packet taco seasoning
- 2 tbsp olive oil
- 8 oz cream cheese, softened
- 16 oz refried beans
- 2 cups salsa
- 3/4 cup cheddar cheese, shredded
- 3/4 cup Monterey Jack cheese, shredded
- Fresh parsley or cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Slice and pound chicken to even thickness, then season with taco seasoning.
- Sear chicken in olive oil until golden, then set aside.
- Spread cream cheese in baking dish, then layer refried beans and salsa.
- Add chicken on top and sprinkle with cheeses.
- Cover and bake 15 minutes, then uncover and bake 10 more minutes.
- Garnish and serve hot.
Notes
- Use freshly shredded cheese for best melting.
- Any salsa works depending on spice preference.
- Serve with rice or tortillas.
