Description

This baked Salsa Chicken is a creamy, cheesy casserole layered with seasoned chicken, cream cheese, refried beans, salsa, and melted cheddar and Monterey Jack. A rich, comforting, and easy dinner perfect for serving with rice.


Ingredients

  • 2 large boneless skinless chicken breasts
  • 1 packet taco seasoning
  • 2 tbsp olive oil
  • 8 oz cream cheese, softened
  • 16 oz refried beans
  • 2 cups salsa
  • 3/4 cup cheddar cheese, shredded
  • 3/4 cup Monterey Jack cheese, shredded
  • Fresh parsley or cilantro for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice and pound chicken to even thickness, then season with taco seasoning.
  3. Sear chicken in olive oil until golden, then set aside.
  4. Spread cream cheese in baking dish, then layer refried beans and salsa.
  5. Add chicken on top and sprinkle with cheeses.
  6. Cover and bake 15 minutes, then uncover and bake 10 more minutes.
  7. Garnish and serve hot.

  • Use freshly shredded cheese for best melting.
  • Any salsa works depending on spice preference.
