Description

These Ranch Chicken Tacos are loaded with juicy ranch-seasoned chicken, crisp lettuce, cheese, tomatoes, avocado, and a creamy cilantro lime ranch sauce. Ready in just 30 minutes, they’re an easy weeknight dinner the whole family will love.


Ingredients

  • For the Cilantro Lime Ranch Sauce:
  • 3/4 cup sour cream
  • 2 tsp dry ranch seasoning
  • 1/2 tsp ground cumin
  • 2 tbsp chopped fresh cilantro
  • Juice of 1/2 lime
  • 2 tsp milk (or more as needed)
  • For the Ranch Chicken:
  • 2 tbsp canola or vegetable oil
  • 1 1/2 lbs boneless skinless chicken breasts, diced
  • 2 tsp dry ranch seasoning
  • 1/2 tsp smoked paprika
  • Juice of 1/2 lime
  • 1 to 2 tbsp chopped fresh cilantro
  • For Serving:
  • 8 (6-inch) flour tortillas
  • 1 1/2 cups shredded iceberg lettuce
  • 1 cup shredded cheddar and Monterey Jack cheese
  • 2 Roma tomatoes, diced
  • 1/4 cup diced red onion
  • 1 large avocado, chopped


Instructions

  1. In a small bowl, combine the sour cream, ranch seasoning, cumin, cilantro, lime juice, and milk. Refrigerate until ready to serve.
  2. Heat the oil in a large skillet over medium heat. Add the diced chicken and cook for 2–3 minutes.
  3. Sprinkle the ranch seasoning and smoked paprika over the chicken. Continue cooking for 6–7 minutes until the chicken is browned and cooked through.
  4. Squeeze the lime juice over the chicken, stir in the cilantro, and remove from the heat.
  5. Toast the tortillas in a dry skillet over medium-high heat for about 1½ minutes per side until lightly browned.
  6. Fill each tortilla with the ranch chicken, lettuce, cheese, tomatoes, onion, and avocado.
  7. Drizzle generously with the cilantro lime ranch sauce and serve immediately.

Notes

  • Chicken thighs can be substituted for chicken breasts for extra juiciness.
  • Prepare the ranch sauce ahead of time for even better flavor.
  • Warm tortillas before serving to prevent cracking.
  • Add jalapeños or hot sauce for extra heat.
