Ingredients
- 4 eggs, lightly beaten
- 3/4 cup milk
- 1/2 cup 100% pure pumpkin puree
- 2 tbsp brown sugar
- 2 tsp pure vanilla extract
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice
- Pinch of kosher salt
- 10 slices thick-sliced wheat or white bread
- 4 tbsp butter for griddle, divided
- Pure maple syrup for serving
Instructions
- Preheat a nonstick griddle to 325°F.
- In a large bowl or shallow dish, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, pumpkin pie spice, and kosher salt until smooth.
- Melt some of the butter on the preheated griddle. Dip each slice of bread into the pumpkin egg mixture, coating both sides, then shake off any excess.
- Place the coated bread on the griddle and cook in batches. Cook until the French toast is light golden brown and fluffy, then flip and cook the other side.
- Repeat with the remaining bread and butter.
- Serve warm with additional butter and warm maple syrup.
Notes
- Thick-sliced wheat or white bread works especially well for this recipe.
- Artesano Bakery Style Wheat or White Bread is recommended.
- Do not soak the bread for too long, as thick bread can become overly soft before cooking.
- Serve immediately with butter and warm maple syrup for the best texture and flavor.
