Description
Marinated cucumber tomato and onion salad is a fresh summer side dish that only takes 5 minutes to throw together. It’s super simple, delicious, and perfect for summer feasting and BBQ parties.
Ingredients
- 3 medium cucumbers, peeled and sliced 1/4 inch thick (about 4 cups)
- 1 medium white onion, sliced and separated into thicker rings
- 3 medium tomatoes, largely chopped
- 1/2 cup vinegar of your choice
- 1/4 cup granulated sugar
- 1 cup water
- 2 teaspoons salt
- 1/2 teaspoon coarse black pepper, or to taste
- 2 tablespoons vegetable oil (olive oil works well)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
Instructions
- Combine the cucumbers, onion, tomatoes, vinegar, sugar, water, salt, black pepper, oil, basil, and parsley in a large bowl.
- Mix everything well until fully combined.
- Refrigerate for at least 2 hours before serving so the vegetables can marinate.
- Serve with the liquid or without, as desired.
Notes
- This salad tastes even better after marinating for a few hours.
- Use your favorite vinegar for a slightly different flavor profile.
