Description

This Low Carb Goulash is a hearty, comforting classic made healthier with zucchini instead of pasta. Packed with rich tomato flavor, beef, and spices, it’s a perfect easy weeknight dinner.


Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 24 ounces marinara sauce (low sugar preferred)
  • 1 cup beef broth
  • 3 medium zucchini, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon Italian seasoning
  • 1 bay leaf
  • 1 teaspoon seasoned salt


Instructions

  1. In a large pot or Dutch oven, cook ground beef, onion, and garlic over medium heat until browned.
  2. Drain excess fat and return meat to the pot.
  3. Add marinara sauce, beef broth, soy sauce, Italian seasoning, bay leaf, and seasoned salt.
  4. Stir well and bring to a boil.
  5. Reduce heat, cover, and simmer for 20–25 minutes, stirring occasionally.
  6. Add chopped zucchini and continue cooking until tender to your liking.
  7. Remove bay leaf before serving.
  8. Adjust seasoning and serve hot, optionally topped with cheese.
