This Low Carb Goulash is a hearty, comforting classic made healthier with zucchini instead of pasta. Packed with rich tomato flavor, beef, and spices, it’s a perfect easy weeknight dinner.
Ingredients
- 1 pound ground beef
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 24 ounces marinara sauce (low sugar preferred)
- 1 cup beef broth
- 3 medium zucchini, chopped
- 1 tablespoon soy sauce
- 1 tablespoon Italian seasoning
- 1 bay leaf
- 1 teaspoon seasoned salt
Instructions
- In a large pot or Dutch oven, cook ground beef, onion, and garlic over medium heat until browned.
- Drain excess fat and return meat to the pot.
- Add marinara sauce, beef broth, soy sauce, Italian seasoning, bay leaf, and seasoned salt.
- Stir well and bring to a boil.
- Reduce heat, cover, and simmer for 20–25 minutes, stirring occasionally.
- Add chopped zucchini and continue cooking until tender to your liking.
- Remove bay leaf before serving.
- Adjust seasoning and serve hot, optionally topped with cheese.
