Description

This Loaded Veggie Burger Salad is a fresh and hearty meal packed with all the classic burger toppings. Crisp lettuce, juicy tomatoes, avocado, pickles, cheese, and crumbled veggie burgers come together with a tangy honey Dijon dressing.


Ingredients

  • 4 cups romaine lettuce, chopped
  • 2 small tomatoes, chopped
  • 1 medium avocado, chopped
  • 1/4 cup red onion, diced
  • 6 dill pickle slices, chopped
  • 1/2 cup cheddar cheese, cubed
  • 2 cooked veggie burgers, crumbled

Honey Dijon Dressing

  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 small garlic clove, minced
  • 1/4 tsp salt
  • Black pepper, to taste


Instructions

  1. Divide chopped lettuce evenly into two salad bowls.
  2. Top each bowl with tomatoes, avocado, red onion, pickles, and cheddar cheese.
  3. Crumble one cooked veggie burger over each salad.
  4. In a small jar, combine dressing ingredients, close lid, and shake until emulsified.
  5. Drizzle dressing over salads just before serving.
  6. Toss gently and enjoy immediately.
