Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 garlic cloves, finely chopped
- 1 tablespoon fresh ginger, grated
- 1 tablespoon fresh red chili, chopped
- ½ tablespoon ground cumin
- ½ tablespoon ground coriander
- ½ teaspoon turmeric
- 1 lb cauliflower florets
- 5 cups vegetable stock
- 1 can (14 oz) lentils, drained and rinsed
- 1 can (13.5 oz) coconut milk
- 3 cups baby spinach
- 2 tablespoons lime juice
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion for 5 minutes until soft.
- Add garlic, ginger, and chili; cook for 2 minutes until fragrant.
- Stir in cumin, coriander, and turmeric.
- Add cauliflower and mix well to coat with spices.
- Pour in vegetable stock, bring to a boil, then simmer for 15 minutes.
- Add lentils and coconut milk; simmer 5 more minutes.
- Add spinach and cook 1–2 minutes until wilted.
- Stir in lime juice, adjust seasoning, and serve hot.
Notes
- Adjust spice level by adding more or less chili.
- Use lime juice at the end for brightness.
