Description

This Lentil Cauliflower Soup is a cozy, nourishing, and flavor-packed bowl made with tender lentils, cauliflower florets, spinach, and warm spices in a creamy coconut broth. A healthy and comforting meal perfect for any season.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 garlic cloves, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fresh red chili, chopped
  • ½ tablespoon ground cumin
  • ½ tablespoon ground coriander
  • ½ teaspoon turmeric
  • 1 lb cauliflower florets
  • 5 cups vegetable stock
  • 1 can (14 oz) lentils, drained and rinsed
  • 1 can (13.5 oz) coconut milk
  • 3 cups baby spinach
  • 2 tablespoons lime juice
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion for 5 minutes until soft.
  3. Add garlic, ginger, and chili; cook for 2 minutes until fragrant.
  4. Stir in cumin, coriander, and turmeric.
  5. Add cauliflower and mix well to coat with spices.
  6. Pour in vegetable stock, bring to a boil, then simmer for 15 minutes.
  7. Add lentils and coconut milk; simmer 5 more minutes.
  8. Add spinach and cook 1–2 minutes until wilted.
  9. Stir in lime juice, adjust seasoning, and serve hot.

Notes

  • Adjust spice level by adding more or less chili.
  • Use lime juice at the end for brightness.
