Description
This fresh and flavorful lemon pizza combines creamy mozzarella with garlic, extra virgin olive oil, parsley, nutty parmesan, and bright lemon.
Ingredients
- 1 ball pizza dough (store-bought or homemade)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon water
- 1 tablespoon fresh parsley, chopped
- 1 small garlic clove, grated
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1/4 teaspoon fine salt
- 1/4 teaspoon black pepper
- 5 oz fresh mozzarella (or shredded mozzarella)
- 1 tablespoon lemon juice (for finishing)
- 2 tablespoons grated parmesan cheese
- 1 tablespoon fresh parsley (for topping)
- Freshly ground black pepper, to taste
Instructions
- Prepare pizza dough according to recipe instructions and preheat oven.
- If using fresh mozzarella, slice and pat dry to remove excess moisture.
- Stretch dough into a 9×13 inch rectangle on parchment paper.
- Transfer dough to a pizza peel or inverted baking sheet.
- In a jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper. Shake well to emulsify.
- Spread the lemon brine evenly over the dough, pressing it into dimples.
- Add mozzarella evenly over the top.
- Bake on preheated pizza stone or inverted baking sheet for 8–10 minutes or until golden and crispy.
- Finish with fresh lemon juice, parmesan, parsley, and black pepper.
- Slice and serve immediately.
Notes
- Use a preheated baking sheet if you don’t have a pizza stone.
- Leftovers can be stored in the fridge for 1 day or frozen up to 3 months.
