Description

Keto Cheeseburger Cauliflower Mac is a creamy, cheesy, low-carb comfort food packed with seasoned beef, tender cauliflower, and rich cheddar flavor for the ultimate keto dinner.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1 cup beef broth
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup diced pickles (optional)
  • 1/2 cup diced tomatoes (optional)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Bring a large pot of water to a boil and cook cauliflower florets for 5–7 minutes until tender. Drain and set aside.
  3. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
  4. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 2 minutes.
  5. In a bowl, whisk together cream cheese and beef broth until smooth.
  6. Stir in shredded cheddar cheese until melted and creamy.
  7. Combine cooked cauliflower with the beef mixture in a large bowl.
  8. Pour cheese sauce over the mixture and stir until fully coated.
  9. Transfer mixture to a greased 9×13-inch baking dish.
  10. Bake for 15–20 minutes until hot and bubbly.
  11. Top with diced pickles and tomatoes if desired.
  12. Garnish with fresh parsley and serve warm.

Notes

  • Use ground turkey instead of beef for a lighter option.
  • Add extra cheddar cheese on top before baking for an even cheesier casserole.
