Keto Cheeseburger Cauliflower Mac is a creamy, cheesy, low-carb comfort food packed with seasoned beef, tender cauliflower, and rich cheddar flavor for the ultimate keto dinner.
Ingredients
- 1 large head cauliflower, cut into florets
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 cup cream cheese, softened
- 1 cup beef broth
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1/2 cup diced pickles (optional)
- 1/2 cup diced tomatoes (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Bring a large pot of water to a boil and cook cauliflower florets for 5–7 minutes until tender. Drain and set aside.
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
- Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 2 minutes.
- In a bowl, whisk together cream cheese and beef broth until smooth.
- Stir in shredded cheddar cheese until melted and creamy.
- Combine cooked cauliflower with the beef mixture in a large bowl.
- Pour cheese sauce over the mixture and stir until fully coated.
- Transfer mixture to a greased 9×13-inch baking dish.
- Bake for 15–20 minutes until hot and bubbly.
- Top with diced pickles and tomatoes if desired.
- Garnish with fresh parsley and serve warm.

- Use ground turkey instead of beef for a lighter option.
- Add extra cheddar cheese on top before baking for an even cheesier casserole.
