Description

This easy Ground Chicken and Cabbage Stir Fry is a quick and wholesome one-pan meal ready in just 30 minutes. Juicy ground chicken is cooked with tender cabbage, carrots, onion, tomato paste, and sweet paprika for a flavorful, budget-friendly dinner that’s perfect for busy weeknights.


Ingredients

  • 3 cups shredded green cabbage, a bit thicker than coleslaw
  • 8 oz ground chicken, or boneless skinless chicken breast or thighs
  • 2 tablespoons yellow onion, diced
  • 1 tablespoon olive oil, or neutral oil for cooking
  • ½ cup medium carrot, grated
  • 1 teaspoon sweet paprika
  • 3 teaspoons tomato paste, or more to taste
  • ¾ cup chicken broth
  • Salt, to taste
  • Black pepper, to taste
  • Chopped parsley
  • ½ cup cooked brown rice, or cauliflower rice


Instructions

  1. Heat ½ tablespoon of the oil in a skillet over medium-high heat. Once hot, add the ground chicken and sauté until almost cooked through. Season with salt and black pepper, then remove the chicken from the skillet and set aside.
  2. Reduce the heat to medium and add more oil if needed. Sauté the diced onion until soft.
  3. Add the shredded cabbage, sweet paprika, and tomato paste. Stir well, then pour in the chicken broth. Cover with a lid and simmer for 20-25 minutes, or until the cabbage is tender and flavorful.
  4. Return the cooked chicken to the skillet. Add the grated carrot and cooked brown rice or cauliflower rice. Stir everything together and simmer for another 5 minutes, until heated through.
  5. Garnish with fresh parsley or other herbs such as green onions or cilantro. Serve with a dollop of sour cream or plain Greek yogurt if desired.
  6. For an extra indulgent finish, remove the skillet from the heat and stir in about 1 tablespoon of salted butter.

Notes

  • To reheat leftovers, place the stir fry in a large skillet over medium heat. Add a little chicken broth to prevent it from drying out and stir until heated through. It can also be reheated in the microwave in an airtight container.
  • Rotisserie chicken can be used for a quick variation. Simply shred the cooked chicken and add it to the skillet following the recipe instructions.
  • Use cauliflower rice instead of brown rice for a lower-carb option.
  • Ground chicken can be replaced with boneless skinless chicken breast or thighs.
