Description

This Ground Beef Casserole with cauliflower rice is an easy, comforting, and family-friendly dish. Made with simple ingredients, it’s perfect for busy weeknights or feeding a crowd.


Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 teaspoon Italian seasoning
  • ½ teaspoon sweet paprika
  • Salt and freshly ground black pepper, to taste
  • 6 ounces fresh baby spinach
  • 10 ounces frozen cauliflower rice, cooked
  • 1 cup sour cream (or plain yogurt)
  • 1 tablespoon butter, room temperature
  • ½ teaspoon dried basil
  • 2–3 tablespoons milk (if needed)
  • 8 ounces shredded Italian blend cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and cook for 2 minutes.
  3. Add garlic and cook for 20 seconds.
  4. Add ground beef, Italian seasoning, paprika, salt, and pepper. Cook until browned.
  5. Stir in spinach and cook until wilted, about 1 minute.
  6. Drain excess liquid and set beef mixture aside.
  7. In a 9×13 baking dish, mix cauliflower rice, sour cream, butter, and dried basil until creamy.
  8. Add beef mixture and stir everything together.
  9. Top with shredded cheese.
  10. Bake for 22–25 minutes until bubbly and cheese is melted.
  11. Let rest 7–10 minutes before serving.
