Description
Grilled Mango Pineapple Chicken is a juicy, tropical-inspired grilled dish featuring marinated chicken, sweet mango, pineapple, and smoky bell peppers for a fresh summer meal.
Ingredients
- Chicken:
- 1 ½ pounds thin-sliced boneless skinless chicken breasts
- 8 ounces mango-pineapple salsa
- â…“ cup lime juice
- ¼ cup olive oil
- ½ teaspoon black pepper
- Bell Peppers:
- 1 large yellow bell pepper, sliced
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Garnishes:
- 4 ounces mango-pineapple salsa
- ½ cup diced mango
- â…“ cup pineapple tidbits
- 2–4 tablespoons fresh cilantro (optional)
Instructions
- In a zip-top bag, combine chicken, salsa, lime juice, olive oil, and black pepper. Seal and marinate for at least 30 minutes.
- Preheat grill to medium-high heat and oil the grates.
- Place sliced peppers in a grill basket, drizzle with olive oil, and season with salt and pepper.
- Grill chicken for 4–5 minutes per side until fully cooked.
- Grill peppers, stirring occasionally, until tender and slightly charred.
- Transfer chicken to a platter and top with extra salsa, mango, pineapple, and cilantro.
- Serve immediately and enjoy.
Notes
- Chicken is best fresh but can be stored in the fridge for up to 5 days.
- Freeze leftovers for up to 4 months.
- For extra flavor, marinate overnight.
