Description

Grilled Mango Pineapple Chicken is a juicy, tropical-inspired grilled dish featuring marinated chicken, sweet mango, pineapple, and smoky bell peppers for a fresh summer meal.


Ingredients

  • Chicken:
  • 1 ½ pounds thin-sliced boneless skinless chicken breasts
  • 8 ounces mango-pineapple salsa
  • â…“ cup lime juice
  • ¼ cup olive oil
  • ½ teaspoon black pepper
  • Bell Peppers:
  • 1 large yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Garnishes:
  • 4 ounces mango-pineapple salsa
  • ½ cup diced mango
  • â…“ cup pineapple tidbits
  • 2–4 tablespoons fresh cilantro (optional)


Instructions

  1. In a zip-top bag, combine chicken, salsa, lime juice, olive oil, and black pepper. Seal and marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat and oil the grates.
  3. Place sliced peppers in a grill basket, drizzle with olive oil, and season with salt and pepper.
  4. Grill chicken for 4–5 minutes per side until fully cooked.
  5. Grill peppers, stirring occasionally, until tender and slightly charred.
  6. Transfer chicken to a platter and top with extra salsa, mango, pineapple, and cilantro.
  7. Serve immediately and enjoy.

Notes

  • Chicken is best fresh but can be stored in the fridge for up to 5 days.
  • Freeze leftovers for up to 4 months.
