Description
These Dutch Oven Turkey Legs are incredibly tender, fall-off-the-bone delicious, and braised in a rich, savory sauce. Searing the turkey legs first builds deep flavor, while slow oven braising keeps the meat moist and juicy. This comforting recipe is perfect for your Thanksgiving table or any special holiday meal.
Ingredients
- 4 turkey legs (about 1.5–2 pounds each)
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups chicken broth
- 1 cup dry white wine (optional)
Instructions
- Sear the turkey legs: Heat the olive oil in a heavy-bottomed Dutch oven over medium-high heat. Add the turkey legs and sear on all sides until deeply golden brown. Work in batches if needed to avoid overcrowding. Transfer the turkey legs to a plate.
- Sauté the aromatics: Add the chopped onion to the Dutch oven and sauté until softened. Add the minced garlic, dried thyme, and dried rosemary. Cook for another minute until fragrant, scraping up the browned bits from the bottom of the pot.
- Deglaze and simmer: Pour in the chicken broth and white wine, if using. Scrape up any remaining browned bits from the bottom of the pot. Bring the liquid to a simmer. Season the turkey legs with salt and black pepper, then nestle them into the aromatic liquid.
- Braise in the oven: Preheat the oven to 300–325°F (150–160°C). Cover the Dutch oven tightly with its lid and transfer it to the oven. Braise for 2½–3 hours, or until the turkey legs are fork-tender.
- Rest and reduce the sauce: Carefully remove the turkey legs from the Dutch oven and set aside to rest. Place the pot back on the stovetop over medium-high heat. Simmer the braising liquid uncovered until it reaches your desired sauce consistency. Skim off excess fat if needed.
- Optional crispy skin: For crispier skin, place the turkey legs on a baking sheet and broil for 2–5 minutes, watching closely until golden and crisp. Alternatively, increase the oven temperature to 400–425°F (200–220°C) and cook uncovered for the final 10–15 minutes.
- Serve: Spoon the reduced sauce over the turkey legs and serve warm.
Notes
- Use a heavy-bottomed, oven-safe Dutch oven for even heat distribution and reliable braising.
- Searing the turkey legs before braising is essential for developing a deep, savory flavor.
- Cook low and slow to achieve tender, moist meat that easily pulls away from the bone.
- If cooking more than 2–3 turkey legs at a time, sear them in batches to prevent overcrowding.
- Rest the turkey legs briefly after braising to allow the juices to redistribute.
- Skim excess fat from the braising liquid before reducing it for a cleaner, richer sauce.
- Taste the sauce before serving and adjust the seasoning as needed.
- White wine is optional. You can replace it with additional chicken broth.
- Broil carefully if you want crispy skin, as it can brown quickly.
