Description

Make this cheesy sausage and potato casserole in the crockpot for a simple, filling dinner with minimal prep. Perfect for busy nights.


Ingredients

  • 1 – 28 oz bag (frozen) Potatoes O’Brien with Onions and Peppers
  • 12 oz package beef smoked sausage, cut into 1 inch pieces
  • 8 oz cheddar cheese, shredded – divided
  • 10.5 oz can condensed cream of mushroom soup
  • ½ cup sour cream
  • ½ tsp salt
  • ½ tsp pepper


Instructions

  1. Lightly coat the inside of your slow cooker with nonstick spray or a thin layer of oil.
  2. Slice the smoked sausage into bite-sized pieces, about 1 inch thick.
  3. Add the potatoes, sausage, and 1½ cups of shredded cheese to the crockpot. Gently stir so everything is evenly mixed.
  4. In a separate bowl, whisk together the condensed soup, sour cream, salt, and pepper until smooth.
  5. Pour the sauce over the potato and sausage mixture, then stir to make sure everything is well coated.
  6. Spread the remaining cheese evenly over the top.
  7. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until the potatoes are fork-tender but still hold their shape.

Notes

  • Use either HIGH or LOW cooking time depending on your schedule.
  • Do not overcook the potatoes, as they should remain tender while holding their shape.
