Description
These crispy tater tot nachos (totchos) combine golden tater tots, seasoned beef, and creamy nacho cheese for a fun, flavorful comfort food perfect for busy nights or casual gatherings.
Ingredients
- 32 oz tater tots
- 15 oz nacho cheese sauce
- 1 lb ground beef
- 1 cup salsa
- 2 tablespoons taco seasoning
- 1/2 cup frozen corn, thawed
- 1/2 cup green bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 2 teaspoons olive oil
- 1 Roma tomato, diced
- 1 large jalapeño, sliced
- 4 oz sliced olives
- 1/2 cup sour cream
- 1 medium avocado, diced
- 2 green onions, sliced
Instructions
- Preheat oven to 425°F (220°C). Spread tater tots on a baking sheet and bake for 24–26 minutes until crispy and golden.
- Meanwhile, cook ground beef in a large skillet over medium-high heat until browned. Drain excess fat.
- Add taco seasoning and salsa to the beef. Stir and cook for 1–2 minutes, then remove from heat.
- In a small skillet, heat olive oil and cook diced peppers until slightly softened and lightly browned.
- Remove tater tots from the oven and evenly top with seasoned beef.
- Pour nacho cheese sauce over the beef. Add corn and cooked peppers.
- Return to oven and bake for 5–10 minutes until heated through and cheese is warm.
- Remove from oven and add toppings: tomato, jalapeño, olives, sour cream, avocado, and green onions.
- Serve immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven at 400°F (200°C) to restore crispiness.
- Freezing is not recommended after assembly.
- You can prepare the beef mixture ahead of time for faster assembly.
