Description

These crispy tater tot nachos (totchos) combine golden tater tots, seasoned beef, and creamy nacho cheese for a fun, flavorful comfort food perfect for busy nights or casual gatherings.


Ingredients

  • 32 oz tater tots
  • 15 oz nacho cheese sauce
  • 1 lb ground beef
  • 1 cup salsa
  • 2 tablespoons taco seasoning
  • 1/2 cup frozen corn, thawed
  • 1/2 cup green bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 2 teaspoons olive oil
  • 1 Roma tomato, diced
  • 1 large jalapeño, sliced
  • 4 oz sliced olives
  • 1/2 cup sour cream
  • 1 medium avocado, diced
  • 2 green onions, sliced


Instructions

  1. Preheat oven to 425°F (220°C). Spread tater tots on a baking sheet and bake for 24–26 minutes until crispy and golden.
  2. Meanwhile, cook ground beef in a large skillet over medium-high heat until browned. Drain excess fat.
  3. Add taco seasoning and salsa to the beef. Stir and cook for 1–2 minutes, then remove from heat.
  4. In a small skillet, heat olive oil and cook diced peppers until slightly softened and lightly browned.
  5. Remove tater tots from the oven and evenly top with seasoned beef.
  6. Pour nacho cheese sauce over the beef. Add corn and cooked peppers.
  7. Return to oven and bake for 5–10 minutes until heated through and cheese is warm.
  8. Remove from oven and add toppings: tomato, jalapeño, olives, sour cream, avocado, and green onions.
  9. Serve immediately.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven at 400°F (200°C) to restore crispiness.
  • Freezing is not recommended after assembly.
  • You can prepare the beef mixture ahead of time for faster assembly.
