Description

Crispy Parmesan Carrots are a delicious side dish featuring roasted carrots coated in parmesan cheese, garlic, and herbs. Sweet, savory, and perfectly crispy on the edges.


Ingredients

  • 6 medium carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups grated parmesan cheese (divided)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Cut carrots into 2-inch pieces, then slice each piece in half lengthwise.
  3. In a bowl, mix olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary.
  4. Toss carrots in the mixture until well coated.
  5. Spread 1 1/2 cups parmesan cheese evenly on the parchment-lined tray.
  6. Place carrots cut side down on top of the cheese in a tight pattern.
  7. Sprinkle remaining parmesan over the carrots.
  8. Bake for 30–35 minutes until tender and crispy.
  9. Garnish with parsley and serve warm.

Notes

  • Air fryer option: cook at 375°F for 8–10 minutes.
  • Make sure carrots are tightly placed for best crispy cheese crust.
