Description
Crispy Parmesan Carrots are a delicious side dish featuring roasted carrots coated in parmesan cheese, garlic, and herbs. Sweet, savory, and perfectly crispy on the edges.
Ingredients
- 6 medium carrots, peeled
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 2 teaspoons garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon red pepper flakes
- 1 teaspoon fresh rosemary, chopped
- 2 cups grated parmesan cheese (divided)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Cut carrots into 2-inch pieces, then slice each piece in half lengthwise.
- In a bowl, mix olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary.
- Toss carrots in the mixture until well coated.
- Spread 1 1/2 cups parmesan cheese evenly on the parchment-lined tray.
- Place carrots cut side down on top of the cheese in a tight pattern.
- Sprinkle remaining parmesan over the carrots.
- Bake for 30–35 minutes until tender and crispy.
- Garnish with parsley and serve warm.
Notes
- Air fryer option: cook at 375°F for 8–10 minutes.
- Make sure carrots are tightly placed for best crispy cheese crust.
