Description

This classic Chicken Cordon Bleu is a crispy, golden chicken roll stuffed with ham and Swiss cheese, then baked and served with a creamy Dijon sauce. A family favorite that feels fancy but is easy enough for weeknight dinners.


Ingredients

  • 1 1/4 pounds chicken breasts, cut into 4 pieces and pounded thin
  • 4 ounces Swiss cheese, sliced
  • 4 ounces ham, sliced
  • 2 tablespoons mayo
  • 1 1/2 tablespoons Dijon mustard
  • 2 tablespoons milk (or plant-based alternative)
  • 2 tablespoons flour (gluten-free if needed)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup Italian seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter (or oil)
  • 1 tablespoon butter (for sauce)
  • 1/2 cup milk (for sauce)
  • 1/4 cup grated Parmesan cheese (for sauce)
  • 1 1/2 teaspoons Dijon mustard (for sauce)
  • 1/2 teaspoon thyme, finely chopped
  • Salt & parsley to taste


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pound chicken to 1/2-inch thickness. Roll Swiss cheese and ham inside each chicken piece and secure with toothpicks.
  3. Mix mayo, Dijon mustard, milk, flour, salt, and pepper in one bowl. In another bowl, combine breadcrumbs and Parmesan.
  4. Dip chicken in mayo mixture, then coat in breadcrumbs.
  5. Heat butter in an oven-safe skillet over medium heat. Sear chicken 2–3 minutes per side until golden crust forms.
  6. Bake for 20–25 minutes until fully cooked.
  7. For sauce: melt butter, add garlic, then flour. Slowly whisk in milk until thickened.
  8. Stir in Parmesan, Dijon, salt, pepper, and thyme until smooth.
  9. Serve chicken topped with sauce and optional parsley.
