Description
This classic Chicken Cordon Bleu is a crispy, golden chicken roll stuffed with ham and Swiss cheese, then baked and served with a creamy Dijon sauce. A family favorite that feels fancy but is easy enough for weeknight dinners.
Ingredients
- 1 1/4 pounds chicken breasts, cut into 4 pieces and pounded thin
- 4 ounces Swiss cheese, sliced
- 4 ounces ham, sliced
- 2 tablespoons mayo
- 1 1/2 tablespoons Dijon mustard
- 2 tablespoons milk (or plant-based alternative)
- 2 tablespoons flour (gluten-free if needed)
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup Italian seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons butter (or oil)
- 1 tablespoon butter (for sauce)
- 1/2 cup milk (for sauce)
- 1/4 cup grated Parmesan cheese (for sauce)
- 1 1/2 teaspoons Dijon mustard (for sauce)
- 1/2 teaspoon thyme, finely chopped
- Salt & parsley to taste
Instructions
- Preheat oven to 350°F (175°C).
- Pound chicken to 1/2-inch thickness. Roll Swiss cheese and ham inside each chicken piece and secure with toothpicks.
- Mix mayo, Dijon mustard, milk, flour, salt, and pepper in one bowl. In another bowl, combine breadcrumbs and Parmesan.
- Dip chicken in mayo mixture, then coat in breadcrumbs.
- Heat butter in an oven-safe skillet over medium heat. Sear chicken 2–3 minutes per side until golden crust forms.
- Bake for 20–25 minutes until fully cooked.
- For sauce: melt butter, add garlic, then flour. Slowly whisk in milk until thickened.
- Stir in Parmesan, Dijon, salt, pepper, and thyme until smooth.
- Serve chicken topped with sauce and optional parsley.
