Description
This halal chickpea noodle soup is a cozy, comforting bowl made with tender vegetables, chickpeas, and pasta simmered in a flavorful herb-infused vegetable broth.
Ingredients
- 1 tbsp olive oil
- 1 large onion (chopped)
- 4 carrots (chopped)
- 3 celery stalks (chopped)
- 2 garlic cloves (minced)
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups vegetable broth
- 1 can chickpeas (rinsed and drained)
- 8 oz rotini pasta
- Fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add onion, carrots, and celery and sauté 5–7 minutes.
- Add garlic, thyme, salt, and pepper. Cook 2–3 more minutes.
- Pour in vegetable broth and bring to a boil.
- Add chickpeas and pasta, reduce heat, and simmer for about 15 minutes until pasta is tender.
- Remove from heat, garnish with parsley, and serve warm.
Notes
- For halal preparation, ensure vegetable broth is halal-certified.
- Store pasta separately if planning leftovers.
