Description

This halal chickpea noodle soup is a cozy, comforting bowl made with tender vegetables, chickpeas, and pasta simmered in a flavorful herb-infused vegetable broth.


Ingredients

  • 1 tbsp olive oil
  • 1 large onion (chopped)
  • 4 carrots (chopped)
  • 3 celery stalks (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 cups vegetable broth
  • 1 can chickpeas (rinsed and drained)
  • 8 oz rotini pasta
  • Fresh parsley (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion, carrots, and celery and sauté 5–7 minutes.
  2. Add garlic, thyme, salt, and pepper. Cook 2–3 more minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Add chickpeas and pasta, reduce heat, and simmer for about 15 minutes until pasta is tender.
  5. Remove from heat, garnish with parsley, and serve warm.

Notes

  • For halal preparation, ensure vegetable broth is halal-certified.
  • Store pasta separately if planning leftovers.
