Ingredients
- 2 lbs chicken thighs, skin-on, bone-in
- 1 lb Italian sausage links (sweet or hot)
- ½ cup all-purpose flour (for dredging)
- 3 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- ½ cup pickled hot cherry peppers
- 2 tbsp pepper brine
- 4–6 garlic cloves, smashed
- 2 sprigs fresh rosemary
- ½ cup dry white wine
- 1 cup chicken broth
- 2 tbsp cold unsalted butter
- ½ lemon (juice + zest)
- Salt and black pepper, to taste
Instructions
- Season chicken and lightly dredge in flour.
- Sear chicken in hot olive oil until golden, then remove.
- Brown sausage, slice, and return to pan.
- Sauté garlic, rosemary, and peppers until softened.
- Deglaze pan with white wine and reduce by half.
- Add chicken broth, pepper brine, and seasonings.
- Return chicken to pan and simmer until cooked through (165°F).
- Finish with butter, lemon juice, and zest.
- Spoon sauce over chicken and serve hot.

- Keep chicken skin exposed while simmering to preserve crispness.
- Use hot cherry peppers for authentic flavor and heat.
