Description

Chicken Scarpariello is a bold Italian-American one-pan dish made with crispy chicken thighs, sausage, sweet peppers, and a tangy white wine vinegar sauce. Rich, savory, and ready in under an hour.


Ingredients

  • 2 lbs chicken thighs, skin-on, bone-in
  • 1 lb Italian sausage links (sweet or hot)
  • ½ cup all-purpose flour (for dredging)
  • 3 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • ½ cup pickled hot cherry peppers
  • 2 tbsp pepper brine
  • 4–6 garlic cloves, smashed
  • 2 sprigs fresh rosemary
  • ½ cup dry white wine
  • 1 cup chicken broth
  • 2 tbsp cold unsalted butter
  • ½ lemon (juice + zest)
  • Salt and black pepper, to taste


Instructions

  1. Season chicken and lightly dredge in flour.
  2. Sear chicken in hot olive oil until golden, then remove.
  3. Brown sausage, slice, and return to pan.
  4. Sauté garlic, rosemary, and peppers until softened.
  5. Deglaze pan with white wine and reduce by half.
  6. Add chicken broth, pepper brine, and seasonings.
  7. Return chicken to pan and simmer until cooked through (165°F).
  8. Finish with butter, lemon juice, and zest.
  9. Spoon sauce over chicken and serve hot.

  • Keep chicken skin exposed while simmering to preserve crispness.
