Description

Learn how to make EASY Chicken Scampi with angel hair pasta in a rich garlic butter sauce with lemon and a white wine flavor (or chicken broth substitute).


Ingredients

  • For the Chicken
  • 1 lb chicken breast, diced
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 1/2 tsp lemon pepper seasoning
  • 3 tbsp flour
  • 2 tbsp olive oil
  • 2 tbsp salted butter
  • Pasta & Sauce
  • 8 oz angel hair pasta
  • 6 tbsp salted butter (divided)
  • 5 cloves garlic, minced
  • 1/2 cup dry white wine (or chicken broth for halal option)
  • 1/8 tsp red pepper flakes
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh lemon juice
  • 1/2 cup pasta water
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 cup Asiago cheese, shredded
  • Salt and pepper, to taste


Instructions

  1. Prep all ingredients before starting. Boil pasta water and cook angel hair (about 4 minutes). Reserve 1/2 cup pasta water.
  2. Season chicken with salt, pepper, Italian seasoning, lemon pepper, and flour.
  3. Heat olive oil and 2 tbsp butter in a pan. Cook chicken 3–4 minutes per side until golden. Remove and set aside.
  4. Lower heat and melt 1 tbsp butter. Add garlic and cook 1–2 minutes.
  5. Add white wine (or chicken broth) and simmer until reduced by half, scraping pan for flavor.
  6. Add remaining butter, cooked chicken, red pepper flakes, and parsley. Stir and lower heat.
  7. Mix pasta water, lemon juice, Parmesan, and Asiago in a container and combine well.
  8. Add drained pasta to skillet, pour cheese mixture over, and toss until coated.
  9. Add diced tomatoes, adjust seasoning, and serve hot with extra cheese and parsley.

Notes

  • For halal version, replace white wine with chicken broth.
  • Freshly grated cheese melts and tastes better than pre-shredded.
  • Fresh garlic and lemon juice give the best flavor.
  • Reserve pasta water — it helps create a silky sauce.
