Learn how to make EASY Chicken Scampi with angel hair pasta in a rich garlic butter sauce with lemon and a white wine flavor (or chicken broth substitute).
Ingredients
- For the Chicken
- 1 lb chicken breast, diced
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- 1/2 tsp lemon pepper seasoning
- 3 tbsp flour
- 2 tbsp olive oil
- 2 tbsp salted butter
- Pasta & Sauce
- 8 oz angel hair pasta
- 6 tbsp salted butter (divided)
- 5 cloves garlic, minced
- 1/2 cup dry white wine (or chicken broth for halal option)
- 1/8 tsp red pepper flakes
- 1/2 cup diced tomatoes
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh lemon juice
- 1/2 cup pasta water
- 1/2 cup Parmesan cheese, shredded
- 1/2 cup Asiago cheese, shredded
- Salt and pepper, to taste
Instructions
- Prep all ingredients before starting. Boil pasta water and cook angel hair (about 4 minutes). Reserve 1/2 cup pasta water.
- Season chicken with salt, pepper, Italian seasoning, lemon pepper, and flour.
- Heat olive oil and 2 tbsp butter in a pan. Cook chicken 3–4 minutes per side until golden. Remove and set aside.
- Lower heat and melt 1 tbsp butter. Add garlic and cook 1–2 minutes.
- Add white wine (or chicken broth) and simmer until reduced by half, scraping pan for flavor.
- Add remaining butter, cooked chicken, red pepper flakes, and parsley. Stir and lower heat.
- Mix pasta water, lemon juice, Parmesan, and Asiago in a container and combine well.
- Add drained pasta to skillet, pour cheese mixture over, and toss until coated.
- Add diced tomatoes, adjust seasoning, and serve hot with extra cheese and parsley.
Notes
- For halal version, replace white wine with chicken broth.
- Freshly grated cheese melts and tastes better than pre-shredded.
- Fresh garlic and lemon juice give the best flavor.
- Reserve pasta water — it helps create a silky sauce.
