Description

This Chicken Pomodoro is a light, fresh, and flavorful one-skillet meal made with tender chicken breast simmered in a garlicky tomato-lemon sauce. Ready in just 20 minutes, it’s perfect for a quick healthy dinner.


Ingredients

  • 2 pounds chicken breast cutlets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 4 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • Additional salt and pepper to taste


Instructions

  1. Pat chicken cutlets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook chicken 2 minutes per side until lightly golden. Remove and set aside.
  3. Add onion and garlic to the skillet and sauté for 5 minutes until softened.
  4. Add cherry tomatoes, chicken broth, and lemon juice. Stir and simmer for 5 minutes.
  5. Return chicken to the skillet, cover, and cook for 8 minutes or until fully cooked through.
  6. Serve hot and enjoy.
