Description
This Chicken Pomodoro is a light, fresh, and flavorful one-skillet meal made with tender chicken breast simmered in a garlicky tomato-lemon sauce. Ready in just 20 minutes, it’s perfect for a quick healthy dinner.
Ingredients
- 2 pounds chicken breast cutlets
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 4 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 2 tablespoons lemon juice
- Additional salt and pepper to taste
Instructions
- Pat chicken cutlets dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook chicken 2 minutes per side until lightly golden. Remove and set aside.
- Add onion and garlic to the skillet and sauté for 5 minutes until softened.
- Add cherry tomatoes, chicken broth, and lemon juice. Stir and simmer for 5 minutes.
- Return chicken to the skillet, cover, and cook for 8 minutes or until fully cooked through.
- Serve hot and enjoy.
