Ingredients
- 1 lb ground chicken
- Salt and pepper
- 1 tbsp peanut oil
- 3 cloves garlic, minced
- 1/3 cup carrots, julienned
- 1/2 red bell pepper, diced
- 8 butter lettuce leaves
- 1/2 cup chicken broth
- 1/4 cup soy sauce
- 3 tbsp honey
- 1 tbsp lime juice
- 1 tsp sriracha
- 1/2 tsp ground ginger
- 1/4 tsp sesame oil
- 1 tbsp cornstarch
- 1/3 cup honey roasted peanuts
- 3 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Whisk sauce ingredients and set aside.
- Cook ground chicken in oil until browned.
- Add garlic, carrots, and bell pepper; cook briefly.
- Pour in sauce and cook until thickened.
- Spoon mixture into lettuce leaves.
- Top with peanuts, green onions, and sesame seeds.
- Serve immediately.

- Ground turkey can be used instead of chicken.
