Description
This Chicken Broccoli Quinoa is an easy one-pan dinner packed with tender chicken, fluffy quinoa, fresh broccoli, and savory herbs. A healthy, protein-rich meal that’s filling and full of flavor.
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 pound boneless skinless chicken breasts, diced
- Salt and pepper to taste
- 1 yellow onion, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon crushed red pepper flakes
- 1 cup uncooked quinoa
- 2 cups chicken broth
- 2 cups broccoli florets
- 1 tablespoon lemon juice
- Fresh parsley, chopped
Instructions
- Heat olive oil in a large pan over medium heat. Add chicken, season with salt and pepper, and cook for 5 minutes until cooked through. Remove and set aside.
- Melt butter in the same pan. Add onion and celery; cook for 3–4 minutes.
- Add garlic, thyme, rosemary, and red pepper flakes. Cook for 1 minute.
- Stir in quinoa and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add broccoli and return chicken to the pan. Cover and cook for 5 more minutes.
- Stir in lemon juice and garnish with parsley before serving.
Notes
- Store leftovers in the fridge for up to 5 days.
- Freeze for up to 3 months.
