Description

Chicken and Rice Queso Casserole is a creamy, cheesy, Tex-Mex style baked dish made with tender chicken, seasoned rice, queso, green chiles, and melted Mexican cheese. A quick, family-friendly comfort meal ready in under an hour.


Ingredients

  • 1 tbsp oil
  • 1 lb chicken breast, diced
  • 1 oz taco seasoning
  • 15 oz queso
  • 3/4 cup half and half
  • 4.5 oz green chiles
  • 3/4 cup onion, finely minced
  • 2 cups instant white rice
  • 1 cup Mexican cheese blend, shredded


Instructions

  1. Preheat oven to 350°F and grease a casserole dish.
  2. Cook chicken in oil until done, then season with taco seasoning.
  3. Prepare rice according to package instructions.
  4. Mix rice with queso, half and half, green chiles, and onion.
  5. Transfer mixture to casserole dish and top with chicken and cheese.
  6. Bake for 20–25 minutes until hot and bubbly.
  7. Garnish and serve warm.

  • Rotisserie chicken can be used to save time.
