Ingredients
- 1 tbsp oil
- 1 lb chicken breast, diced
- 1 oz taco seasoning
- 15 oz queso
- 3/4 cup half and half
- 4.5 oz green chiles
- 3/4 cup onion, finely minced
- 2 cups instant white rice
- 1 cup Mexican cheese blend, shredded
Instructions
- Preheat oven to 350°F and grease a casserole dish.
- Cook chicken in oil until done, then season with taco seasoning.
- Prepare rice according to package instructions.
- Mix rice with queso, half and half, green chiles, and onion.
- Transfer mixture to casserole dish and top with chicken and cheese.
- Bake for 20–25 minutes until hot and bubbly.
- Garnish and serve warm.

- Rotisserie chicken can be used to save time.
- Any type of cooked rice works.
