Description

Cheesy Zucchini Breadsticks are a low-carb, veggie-packed twist on classic breadsticks. Golden, cheesy, and crispy, they’re perfect as a snack, appetizer, or pizza night side dish with marinara or ranch for dipping.


Ingredients

  • 2 medium zucchinis, shredded (about 2 cups)
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese (for topping)
  • Optional: fresh parsley or basil for garnish


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Shred zucchini and squeeze out excess moisture using a clean towel.
  3. In a bowl, mix zucchini, eggs, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread mixture onto baking sheet into a thin, even rectangle.
  5. Bake for 20–25 minutes until golden and firm.
  6. Remove from oven and sprinkle remaining mozzarella on top.
  7. Bake again for 5–7 minutes until cheese is melted and bubbly.
  8. Let cool slightly, slice into breadsticks, garnish, and serve.

Notes

  • Squeeze zucchini very well to avoid soggy texture.
  • Best served fresh with marinara or ranch dip.
