Description
Cheesy Zucchini Breadsticks are a low-carb, veggie-packed twist on classic breadsticks. Golden, cheesy, and crispy, they’re perfect as a snack, appetizer, or pizza night side dish with marinara or ranch for dipping.
Ingredients
- 2 medium zucchinis, shredded (about 2 cups)
- 2 large eggs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese (for topping)
- Optional: fresh parsley or basil for garnish
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Shred zucchini and squeeze out excess moisture using a clean towel.
- In a bowl, mix zucchini, eggs, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Spread mixture onto baking sheet into a thin, even rectangle.
- Bake for 20–25 minutes until golden and firm.
- Remove from oven and sprinkle remaining mozzarella on top.
- Bake again for 5–7 minutes until cheese is melted and bubbly.
- Let cool slightly, slice into breadsticks, garnish, and serve.
Notes
- Squeeze zucchini very well to avoid soggy texture.
- Best served fresh with marinara or ranch dip.
