Description

This halal buffalo chicken sweet potato casserole is a bold, high-protein one-pan meal packed with spicy buffalo flavor, tender chicken, roasted veggies, and melty cheese.


Ingredients

  • 2 lbs halal chicken breast (cubed)
  • 5 medium sweet potatoes (cubed)
  • 2 heads broccoli (cut into florets)
  • 1 cup buffalo sauce (halal-certified)
  • 1/2 cup olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 cup shredded cheddar cheese (halal-certified)
  • Green onions (for garnish)


Instructions

  1. Preheat oven to 220°C (425°F) and grease a baking dish.
  2. Mix buffalo sauce, olive oil, garlic powder, onion powder, salt, and pepper.
  3. Toss sweet potatoes with half the sauce mixture and spread in dish.
  4. Roast for 30 minutes, flipping halfway.
  5. Toss chicken and broccoli with remaining sauce.
  6. Add on top of sweet potatoes and bake 20–25 minutes until chicken is cooked.
  7. Sprinkle cheese on top and broil 3–5 minutes until melted.
  8. Garnish with green onions and serve hot.

  • Ensure potatoes are fully cooked before adding chicken.
