Description
This halal buffalo chicken sweet potato casserole is a bold, high-protein one-pan meal packed with spicy buffalo flavor, tender chicken, roasted veggies, and melty cheese.
Ingredients
- 2 lbs halal chicken breast (cubed)
- 5 medium sweet potatoes (cubed)
- 2 heads broccoli (cut into florets)
- 1 cup buffalo sauce (halal-certified)
- 1/2 cup olive oil
- 2 tsp garlic powder
- 2 tsp onion powder
- 1/2 tsp salt
- 1 tsp black pepper
- 1 cup shredded cheddar cheese (halal-certified)
- Green onions (for garnish)
Instructions
- Preheat oven to 220°C (425°F) and grease a baking dish.
- Mix buffalo sauce, olive oil, garlic powder, onion powder, salt, and pepper.
- Toss sweet potatoes with half the sauce mixture and spread in dish.
- Roast for 30 minutes, flipping halfway.
- Toss chicken and broccoli with remaining sauce.
- Add on top of sweet potatoes and bake 20–25 minutes until chicken is cooked.
- Sprinkle cheese on top and broil 3–5 minutes until melted.
- Garnish with green onions and serve hot.
Notes
- Use halal-certified buffalo sauce and cheese.
- Ensure potatoes are fully cooked before adding chicken.
