Description

This halal cucumber pasta salad with coleslaw dressing is a creamy, crunchy, and refreshing side dish made with tender pasta, fresh vegetables, and a tangy-sweet dressing.


Ingredients

  • 2 cups macaroni (dry)
  • 2 1/4 cups cucumbers (diced)
  • 1 green bell pepper (finely diced)
  • 3 celery stalks (sliced)
  • 1/2 red onion (finely diced)
  • 16 oz coleslaw mix
  • 1 1/2 cups mayonnaise
  • 1/4 cup sugar
  • 1/3 cup apple cider vinegar
  • 1/2 tsp garlic powder
  • 1 tbsp lemon juice
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp celery seed
  • 1 tsp Dijon mustard


Instructions

  1. Cook macaroni in salted water until al dente, then drain and rinse with cold water.
  2. Prep cucumbers, bell pepper, celery, and red onion.
  3. Whisk together mayonnaise, sugar, vinegar, garlic powder, lemon juice, salt, pepper, celery seed, and Dijon mustard.
  4. Combine pasta, vegetables, and coleslaw mix in a large bowl.
  5. Pour dressing over and mix well until evenly coated.
  6. Chill for at least 30–60 minutes before serving.
