Description
This halal cucumber pasta salad with coleslaw dressing is a creamy, crunchy, and refreshing side dish made with tender pasta, fresh vegetables, and a tangy-sweet dressing.
Ingredients
- 2 cups macaroni (dry)
- 2 1/4 cups cucumbers (diced)
- 1 green bell pepper (finely diced)
- 3 celery stalks (sliced)
- 1/2 red onion (finely diced)
- 16 oz coleslaw mix
- 1 1/2 cups mayonnaise
- 1/4 cup sugar
- 1/3 cup apple cider vinegar
- 1/2 tsp garlic powder
- 1 tbsp lemon juice
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp celery seed
- 1 tsp Dijon mustard
Instructions
- Cook macaroni in salted water until al dente, then drain and rinse with cold water.
- Prep cucumbers, bell pepper, celery, and red onion.
- Whisk together mayonnaise, sugar, vinegar, garlic powder, lemon juice, salt, pepper, celery seed, and Dijon mustard.
- Combine pasta, vegetables, and coleslaw mix in a large bowl.
- Pour dressing over and mix well until evenly coated.
- Chill for at least 30–60 minutes before serving.
Notes
- For halal version, ensure mayonnaise and mustard are halal-certified.
- Chill before serving for best flavor.
