These Baked Maple Glazed Apple Crisp Doughnuts are soft, fluffy baked donuts packed with fresh shredded apple, topped with a crunchy cinnamon streusel, and finished with a sweet maple glaze. They’re the perfect homemade fall breakfast or dessert in just over 30 minutes.
Ingredients
- 3/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup canola or vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 2/3 cups all-purpose flour
- 3/4 to 1 cup peeled shredded apple
- Streusel:
- 1/2 cup large oats
- 2 tablespoons cold butter
- 2 tablespoons all-purpose flour
- 1/4 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- Maple Glaze:
- 1 tablespoon melted butter
- 2 tablespoons pure maple syrup
- 3/4 cup powdered sugar
Instructions
- Preheat oven to 425°F (220°C) and grease donut pans.
- Whisk together the sugar, melted butter, and oil until smooth.
- Add the eggs, vanilla, buttermilk, baking powder, cinnamon, baking soda, and salt. Mix well.
- Add the flour and stir just until combined, then fold in the shredded apple.
- For the streusel, mix the oats, butter, flour, brown sugar, and cinnamon until crumbly.
- Pipe or spoon the batter into the donut pans, filling each cavity about three-quarters full.
- Press the streusel evenly over the tops.
- Bake for 8–10 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- Whisk together the melted butter, maple syrup, and powdered sugar until smooth. Drizzle over the cooled doughnuts and let the glaze set before serving.
Notes
- The batter will be thick; using a piping bag makes filling the pan much easier.
- Peel the apple before shredding for the best texture.
- If the glaze is too thick, add a few drops of milk until it reaches a drizzle consistency.
- Store in an airtight container for up to 2 days at room temperature or 5 days in the refrigerator. Freeze unglazed doughnuts for up to 3 months.
