Description

These quick halal buffalo chickpea wraps are bold, spicy, and packed with fresh crunch—perfect for a fast vegan lunch or light dinner with big flavor.


Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 2 tbsp vegan mayonnaise or Greek yogurt
  • 2 tbsp halal buffalo hot sauce
  • 1 tbsp fresh lemon juice
  • 1 celery stalk (finely diced)
  • 1 small carrot (grated)
  • 2 tbsp red onion (finely diced)
  • 1 tbsp fresh parsley (chopped)
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 4 large tortillas or whole wheat wraps (halal-certified)
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar or vegan cheese (optional)
  • 1/4 cup halal ranch or yogurt dressing (optional)


Instructions

  1. Mash chickpeas in a bowl using a fork.
  2. Add mayonnaise, buffalo sauce, lemon juice, celery, carrot, onion, parsley, and spices.
  3. Mix until well combined.
  4. Lay tortillas flat and add lettuce and tomatoes.
  5. Spoon chickpea mixture evenly onto each wrap.
  6. Add cheese or dressing if desired.
  7. Roll tightly, folding sides inward.
  8. Slice and serve immediately.
