Description
This 1-Pot Lentil Dal is a creamy, hearty, and comforting vegan dish made with tender lentils simmered in warm Indian spices and coconut milk. Perfect for a nourishing and easy one-pot meal.
Ingredients
- 1 cup dry green lentils
- 1 tbsp coconut oil or vegetable oil
- 1 medium onion, chopped
- 1 large carrot, diced
- 3 cloves garlic, minced
- 2 tsp fresh ginger, grated
- 1 red or green chili, chopped
- 2 tsp ground cumin
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp ground coriander
- 3 cups vegetable broth
- 1 cup coconut milk
- Salt and black pepper to taste
Instructions
- Rinse lentils and optionally soak for 15 minutes, then drain.
- Heat oil in a large pot and sauté onion for 3–4 minutes.
- Add garlic, ginger, chili, and carrot; cook briefly until fragrant.
- Add spices, lentils, and vegetable broth. Stir and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in coconut milk and cook another 10–15 minutes until creamy and lentils are tender.
- Adjust seasoning and serve hot with rice or naan.
Notes
- Sweet potato can replace carrot.
- Use lime juice before serving for extra brightness.
- Blend part of the dal for a creamier texture.
