Description

These Whipped Shortbread Cookies are melt-in-your-mouth buttery delights that require just a few ingredients. Soft, delicate, and light as air, they’re a holiday classic — perfect for decorating or enjoying plain.

Ingredients

  • 1 ½ cups butter, at room temperature (salted)
  • ¾ cup confectioners’ sugar
  • 2 ¼ cups all-purpose flour
  • ¾ cup cornstarch
  • 2 teaspoons pure vanilla extract (or lemon or orange extract)
  • ¼ cup sprinkles (optional, for decorating)

Instructions

  1. Preheat oven: to 300°F (150°C). Line baking sheets with parchment paper.
  2. Cream butter and sugar: Beat butter and confectioners’ sugar together until light and fluffy, about 3–4 minutes.
  3. Add dry ingredients: In a separate bowl, whisk together flour and cornstarch. Gradually mix into butter mixture until smooth and creamy.
  4. Add flavoring: Stir in vanilla or your preferred extract.
  5. Shape cookies: Drop by spoonfuls or pipe onto baking sheets using a star tip. Decorate with sprinkles if desired.
  6. Bake: 15–18 minutes, or until edges are barely golden. Do not overbake.
  7. Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Be sure butter is softened, not melted, for best texture.
  • These cookies freeze beautifully — store up to 3 months.
  • For extra flavor, add a pinch of salt if using unsalted butter.
