Description
These Vanilla Pecan Pralines are rich, creamy Southern candies made with toasted pecans, buttery caramel, and warm vanilla. Perfect for gifting, holiday sweets, or quick homemade treats.
Ingredients
- 2 cups granulated sugar
- 1 cup light brown sugar
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 2 cups pecan halves (lightly toasted)
- 1/4 teaspoon salt
Instructions
- Lightly toast pecan halves in a dry skillet over medium heat for 4–5 minutes until fragrant. Set aside.
- In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, and butter. Stir over medium heat until sugars dissolve.
- Attach a candy thermometer and cook until mixture reaches 238°F (soft-ball stage), stirring occasionally.
- Remove from heat and stir in vanilla extract and toasted pecans. Continue stirring until mixture thickens and becomes less glossy.
- Quickly drop spoonfuls onto parchment paper. Let cool about 30 minutes before serving or storing.
Notes
- Use a candy thermometer for perfect consistency—pralines need to reach exactly 238°F.
