Description

These Vanilla Pecan Pralines are rich, creamy Southern candies made with toasted pecans, buttery caramel, and warm vanilla. Perfect for gifting, holiday sweets, or quick homemade treats.


Ingredients

  • 2 cups granulated sugar
  • 1 cup light brown sugar
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves (lightly toasted)
  • 1/4 teaspoon salt


Instructions

  1. Lightly toast pecan halves in a dry skillet over medium heat for 4–5 minutes until fragrant. Set aside.
  2. In a medium saucepan, combine granulated sugar, brown sugar, heavy cream, and butter. Stir over medium heat until sugars dissolve.
  3. Attach a candy thermometer and cook until mixture reaches 238°F (soft-ball stage), stirring occasionally.
  4. Remove from heat and stir in vanilla extract and toasted pecans. Continue stirring until mixture thickens and becomes less glossy.
  5. Quickly drop spoonfuls onto parchment paper. Let cool about 30 minutes before serving or storing.

Notes

  • Use a candy thermometer for perfect consistency—pralines need to reach exactly 238°F.
