Description
Flaky, tender tilapia fillets are enveloped in a vibrant, smoky roasted red pepper sauce with garlic and lemon. A quick Mediterranean-style dish perfect for weeknights or special occasions.
Ingredients
- 4 tilapia fillets (about 6 oz each)
- 2 large red bell peppers
- 3 garlic cloves
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C). Slice red bell peppers, toss with olive oil, salt, and pepper, and spread on a baking sheet.
- Roast peppers for about 20 minutes until softened and slightly charred.
- Blend roasted peppers with garlic and lemon juice until smooth to make the sauce.
- Heat an oiled skillet over medium heat and cook tilapia fillets for 3–4 minutes per side until golden and flaky.
- Pour roasted pepper sauce over the fish and simmer for 1 minute before serving.
Notes
- Serve with rice, couscous, or roasted vegetables for a complete meal.
- The roasted pepper sauce can be made ahead and refrigerated for up to 3 days.
