Description

Flaky, tender tilapia fillets are enveloped in a vibrant, smoky roasted red pepper sauce with garlic and lemon. A quick Mediterranean-style dish perfect for weeknights or special occasions.


Ingredients

  • 4 tilapia fillets (about 6 oz each)
  • 2 large red bell peppers
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 400°F (200°C). Slice red bell peppers, toss with olive oil, salt, and pepper, and spread on a baking sheet.
  2. Roast peppers for about 20 minutes until softened and slightly charred.
  3. Blend roasted peppers with garlic and lemon juice until smooth to make the sauce.
  4. Heat an oiled skillet over medium heat and cook tilapia fillets for 3–4 minutes per side until golden and flaky.
  5. Pour roasted pepper sauce over the fish and simmer for 1 minute before serving.

Notes

  • Serve with rice, couscous, or roasted vegetables for a complete meal.
