Description

Delicious heart-shaped thumbprint cookies filled with your favorite jam. Perfect for Valentine’s Day or any occasion, and easy to make vegan!


Ingredients

  • 3/4 cup butter (softened, or vegan butter for vegan version)
  • 1/2 cup lightly packed brown sugar
  • 1 egg (or 1 tbsp ground flax + 2 tbsp water for vegan)
  • 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup jam of choice (raspberry, strawberry, apricot, etc.)


Instructions

  1. Preheat oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. Cream together butter and brown sugar until light and fluffy.
  3. Add egg (or flax mixture) and vanilla; mix until incorporated.
  4. Blend in flour and salt until soft dough forms.
  5. Roll dough into 1-inch balls and place 1 1/2 inches apart on baking sheet.
  6. Press thumb or back of teaspoon twice to form heart-shaped indent.
  7. Bake 12–15 minutes until edges are lightly golden.
  8. Cool on sheet for 5 minutes, then transfer to wire rack; reshape indents if needed.
  9. Once cooled, fill heart-shaped centers with a small dollop of jam.

Notes

  • Vegan option: Replace egg with 1 tbsp ground flaxseed + 2 tbsp water and use vegan butter.
  • Let cookies cool before adding jam to prevent melting.
  • Store in airtight container up to 5 days. Double batch recommended—they disappear fast!
