Ingredients

  • 4 large baking potatoes (russet or Yukon Gold)
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup salsa
  • 1/2 cup sour cream or Greek yogurt
  • Optional Toppings: chopped tomatoes, green onions, guacamole, jalapeños


Instructions

  1. Preheat oven to 400°F (200°C). Pierce potatoes several times with a fork.
  2. Bake potatoes directly on the oven rack for about 45 minutes, or until fork-tender.
  3. While potatoes bake, brown ground beef in a skillet over medium heat until cooked through.
  4. Stir in taco seasoning with a splash of water and simmer for 2–3 minutes.
  5. Slice baked potatoes open and fluff the insides with a fork.
  6. Fill potatoes with taco meat and top with shredded cheese.
  7. Return to the oven for 5 minutes, until cheese is melted.
  8. Top with salsa, sour cream, and desired toppings. Serve hot.
