Ingredients
- 16 ounces mushrooms
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
- 6 cloves garlic, minced
- 1 teaspoon kosher salt
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons soy sauce
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried tarragon
- 1/2 teaspoon black pepper
- 1/4 teaspoon chili powder
- 1/2 teaspoon browning sauce (optional)
- Fresh chives, chopped (for garnish)
Instructions
- Clean mushrooms with a damp cloth and trim dry stem ends.
- Heat a skillet over medium heat. Add olive oil and 1 tablespoon butter.
- Add mushrooms and salt. Cook undisturbed for 3 minutes to sear.
- Mix paprika, onion powder, oregano, tarragon, pepper, and chili powder in a small bowl.
- Add garlic and spice mix to mushrooms. Cook 1–2 minutes until fragrant.
- If using browning sauce, stir it in and cook 1–2 minutes.
- Add Worcestershire and soy sauce. Cook 2–3 minutes until reduced.
- Stir in remaining butter until melted and glossy.
- Garnish with chopped chives and serve warm.
