Ingredients

  • 1 lb steak (sirloin, ribeye, or strip)
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 8 oz fettuccine pasta
  • 2 tbsp chopped fresh parsley
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp red chili flakes or diced red pepper (optional)


Instructions

  1. Pat steak dry and season both sides with Cajun seasoning, salt, and black pepper. Let rest at room temperature for 15–20 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear steak for 3–4 minutes per side until desired doneness. Add butter and garlic during the last minute, spooning over the steak.
  3. Remove steak and let rest for 5 minutes, then slice against the grain.
  4. Cook fettuccine in salted water according to package instructions. Reserve ½ cup pasta water, then drain.
  5. In the same skillet, melt butter and sauté garlic for 30 seconds. Add heavy cream and bring to a gentle simmer.
  6. Stir in Parmesan cheese and reserved pasta water until smooth and creamy.
  7. Toss cooked fettuccine in the sauce, adjusting consistency with more pasta water if needed.
  8. Serve pasta with sliced steak, garnish with parsley and extra Parmesan, and enjoy immediately.
