Ingredients
- 1 lb steak (sirloin, ribeye, or strip)
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 oz fettuccine pasta
- 2 tbsp chopped fresh parsley
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp red chili flakes or diced red pepper (optional)
Instructions
- Pat steak dry and season both sides with Cajun seasoning, salt, and black pepper. Let rest at room temperature for 15–20 minutes.
- Heat olive oil in a skillet over medium-high heat. Sear steak for 3–4 minutes per side until desired doneness. Add butter and garlic during the last minute, spooning over the steak.
- Remove steak and let rest for 5 minutes, then slice against the grain.
- Cook fettuccine in salted water according to package instructions. Reserve ½ cup pasta water, then drain.
- In the same skillet, melt butter and sauté garlic for 30 seconds. Add heavy cream and bring to a gentle simmer.
- Stir in Parmesan cheese and reserved pasta water until smooth and creamy.
- Toss cooked fettuccine in the sauce, adjusting consistency with more pasta water if needed.
- Serve pasta with sliced steak, garnish with parsley and extra Parmesan, and enjoy immediately.
Notes
- Always slice steak against the grain for maximum tenderness.
- Use freshly grated Parmesan for the creamiest sauce.
- Reserved pasta water helps create a silky, restaurant-style sauce.
