Ingredients
- 2 eggs
- 3/4 cup brown sugar
- 1/2 cup canola oil
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 1/2 cups grated carrot
- 1 cup grated zucchini
- 1/2 cup chopped walnuts
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground ginger
- 1/4 tsp baking soda
- 8 oz reduced-fat cream cheese
- 1 cup icing sugar
- 1 1/2 tsp lemon zest
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Whisk eggs, brown sugar, canola oil, honey, and vanilla until combined.
- Fold in grated carrot, zucchini, and walnuts until evenly mixed.
- Mix flour, baking powder, ground ginger, and baking soda; gradually combine with wet ingredients.
- Pour batter into prepared pan and smooth the top. Bake 25 minutes or until a toothpick comes out clean.
- For frosting: Beat cream cheese, icing sugar, and lemon zest until smooth. Once cooled, frost bars and cut into squares.
