Description

Spiced Ginger Carrot and Zucchini Bars with a refreshing Lemon Cream Cheese Frosting. Moist, flavorful, and perfect for dessert, snacks, or breakfast.


Ingredients

  • 2 eggs
  • 3/4 cup brown sugar
  • 1/2 cup canola oil
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrot
  • 1 cup grated zucchini
  • 1/2 cup chopped walnuts
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/4 tsp baking soda
  • 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 tsp lemon zest


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Whisk eggs, brown sugar, canola oil, honey, and vanilla until combined.
  3. Fold in grated carrot, zucchini, and walnuts until evenly mixed.
  4. Mix flour, baking powder, ground ginger, and baking soda; gradually combine with wet ingredients.
  5. Pour batter into prepared pan and smooth the top. Bake 25 minutes or until a toothpick comes out clean.
  6. For frosting: Beat cream cheese, icing sugar, and lemon zest until smooth. Once cooled, frost bars and cut into squares.
