These Southern Bayou Roadhouse Surf-and-Turf Loaded Fries are bold, smoky, cheesy, and packed with Cajun flavor. Crispy fries are topped with seasoned steak, juicy shrimp, and a rich cheddar cheese sauce, then finished with fried onions and green onions for the ultimate indulgent comfort food.

- For the Fries
- 4 large russet potatoes, cut into fries
- 3 tbsp vegetable oil
- Salt and black pepper, to taste
- 1 tsp smoked paprika

- For the Surf-and-Turf Toppings
- 1/2 lb sirloin steak, thinly sliced
- 1/4 lb shrimp, peeled and deveined
- 1 tbsp Cajun seasoning
- 1 tbsp butter
- 1 tsp garlic powder

- For the Cheese Sauce
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tsp flour
- 1/2 tsp paprika
- Salt and pepper, to taste
- For Garnish
- 2 green onions, sliced
- 1/4 cup crispy fried onions
- Hot sauce (optional)
Instructions
- Prepare the Fries: Preheat oven to 425°F (220°C). Toss the cut potatoes with oil, salt, pepper, and smoked paprika. Spread on a baking sheet and bake for 30–40 minutes until crispy, flipping halfway.
- Cook the Surf-and-Turf: Season steak and shrimp with Cajun seasoning and garlic powder. Heat butter in a pan. Sear steak slices until browned, remove, then cook shrimp until pink. Set aside.
- Make the Cheese Sauce: In a small saucepan, heat milk. Whisk in flour until slightly thickened. Add cheddar cheese, paprika, salt, and pepper. Stir until smooth and melted.
- Assemble: Place fries on a platter. Add steak and shrimp on top. Drizzle with warm cheese sauce. Finish with green onions, crispy fried onions, and optional hot sauce.
- Serve immediately and enjoy!
