Description

These Smoked Gouda Cheesy Mashed Potatoes take mashed potatoes to the next level—smooth, creamy, cheesy with a hint of smokiness. Perfectly irresistible!


Ingredients

  • 2 ½ Yukon Gold potatoes, peeled and quartered
  • Salt and freshly ground pepper, to taste
  • 6 tbsp unsalted butter, sliced
  • 2 cups (about 4 ½ oz) finely grated smoked Gouda
  • ½ cup sour cream, room temperature
  • ½¾ cup heavy cream (or half-and-half), warm


Instructions

  1. Place potatoes in a large pot and cover with cold, salted water. Bring to boil and cook 15 minutes until very tender. Drain.
  2. Using a potato ricer, rice the potatoes back into the pot off the heat.
  3. Stir in butter until melted and incorporated.
  4. Add cheese, sour cream, ⅓ cup heavy cream, and salt & pepper. Stir until smooth. Add more cream as needed for desired consistency.
  5. Taste and adjust seasoning, serve immediately.

Notes

  • Heat heavy cream gently before adding—stovetop or microwave (45–60 sec).
  • Can be made up to 2 days ahead; add 1/3 cup cream initially and rest when reheating.
  • Store leftovers in airtight container in fridge up to 5 days or freeze up to 3 months.
  • Reheat on stove, microwave, or oven, adding butter or cream to restore creamy consistency.
